I just picked up a 2019 Clarity EV. So far I really like the car and think the interior looks nice. My one concern is the piano black trim in the center console area. Has anyone tried covering that with a vinyl wrap? I was thinking of using a carbon fiber pattern. My thinking is that the vinyl will be less prone to scratches than the gloss black trim.

You're on the right track.
Wish I would have had your foresight with my 2018 Clarity. I sometimes need to use oxygen on long road trips, and didn't notice until after completing one trip that part of the oxygen tank holder had been pushed against the polished middle console and left some noticeable scratches. Not a big deal, just normal wear and tear, but in this case it could have been prevented. Good luck finding some protection.
